GINGER SALAD (Gin Thohk)

What's in your kit:

50G PICKLED GINGER

50G DOUBLE FRIED BEANS

2 TBSP SHALLOT OIL

What you need at home:

2 MEDIUM SIZED TOMATOES

¼ WHITE CABBAGE

2 ASIAN SHALLOTS OR 1 BANANA SHALLOT

1 TBSP CRSIPY SHALLOTS (HOMEMADE OR STORE BOUGHT)

6 CORIANDER STALKS

1 GARLIC CLOVE

1 BIRD’S EYE CHILLI

1 TBSP CHICKPEA FLOUR

¼ LIME

PINCH OF SALT

S = 2-3 People | L = 4-6 People

Preparation:

1) Toast the chickpea flour in a pan for about 5 mins until deep brown and aromatic - allow to cool

2) Finely slice your fresh shallots (double the amount and fry in neutral cooking oil until crispy, if making your own)

3) Finely slice the tomatoes, garlic & chilli

4) Finely shred the cabbage

5) Chop the coriander

6) Add all ingredients to a bowl, dress with the shallot oil, juice of the lime & season with salt to taste

7) Mix well & portion

8) Enjoy!
