LENTIL CHOW CHOW (v) (Pae Hin Gurka Thee)

What's in your kit:

Lentil Curry Paste with Green Beans

Glass Noodles

Chow Chow (aka Chayote)

Sweet Potato Crisps (garnish)

Chilli Jam (garnish)

Coriander (garnish)

Paprika Oil (garnish)

What you need at home:

250ml Water (2-3p) / 500ml Water (4-6p)

Preparation:

1) Decant lentil curry paste and glass noodles into a pan

2) Add the water & bring the mixture to a simmer for 5 minutes, stirring frequently to mix & to make sure it doesn’t stick to the pan

3) Warm your chow chow on a baking tray in the oven (180 degrees; 5min) or in a microwave (2-3 min)

4) Now chop the coriander, add it to the lentils & stir through before taking off the heat. Make sure the mixture is piping hot!

5) Plate the lentil curry and garnish with a dollop of chilli jam, a handful of sweet potato crisps and a drizzle of paprika oil

6) Enjoy!
